Chicken Pot Pie

The chicken, vegetables and sauce all mixed together.

As you can see it kind of made a mess in the dish, so I would recommend putting it on a cookie sheet so you don't make a mess in your oven. Or maybey if I had used a bigger dish this wouldn't have happened.

I have been in need of a major menu overhaul. Tonight I decided to try something different so I made homeade chicken pot pie. I was so excited about it that I actually took pictures of it while I was making it. It turned out really yummy and it was a huge hit in my family. I thought I would post the recipe in case anyone else wants to try it.

2 frozen 9 inch pie crusts
4 chicken breasts cut into chunks
1/2 onion chopped finely
1/3 cup butter
1 cup frozen peas
3 stalks of celery chopped
about 15 mini carrots chopped
3 small potatoes pealed & chopped
2 tsp. Chicken boullion
1 can cream of chicken soup
1. cook the onions in the butter until the onions are translucent. Then add the chicken chunks to the onions and cook until the chicken is cooked through.

2. In a seperate sauce pan cook the peas, celery, carrots and potatoes in boiling water until the vegetables are tender.

3. Add the chicken boullion and cream of chicken soup to the onions and butter.

4. Drain the water from the vegetables and add the vegetables to the chicken mixture.

5. With cooking spray coat a casserole dish and place one of the pie crusts in the bottom of the dish. Pour the chicken and vegetables into the pie crust and then cover with the 2nd pie crust. Put a few slits in the pie crust for venting.

Preheat the oven to 375 degrees. Place dish in the oven and cook for 30 minutes covering the crust with tin foil. After 30 minutes remove the tin foil and cook for another 30 minutes. let cool for 2-3 minutes before serving.

Health

I haven't updated my blog for a few weeks, I haven't really had much to say. I feel bad because it was Reid's birthday last week and I didn't take a single picture of his birthday parties or anything. I have been thinking that it is partially because I am finding that I get a little depressed during the month of January. It may because of the lack of sunshine, or the let down of the holidays or because of the cold but I feel a bit blue. I have noticed it the last couple of years and it seems to get a bit worse each year. I am going to try and snap out of it.

This last week I got the flu, or a bad cold or whatever it was. I am telling you it was no fun. I am over the worst of it I think, but still not feeling 100% better. I don't really feel like doing much of anything except lay around. I am trying today to get some housework done since I haven't done much the last several days.

I am normally a pretty healthy person the only real health issues I have had have been my allergies and asthma, which stay pretty controlled with the help of medicine. Other than that I have been quite lucky when it comes to my health. I decided that I really take that for granted. I feel very blessed that most of the time I feel good, I have energy and I can do what I want and need to do on a daily basis. This last week of being sick and not being able to do that has made me realize how blessed I am when it comes to my health. I look around at people that struggle daily with their health and I feel bad that I haven't had very much compassion for their trials. Sometimes I have had the tendency to not be understanding or empathetic of others in this area. I hope that I can do better.

My poor little Treyton and Carolina are still a bit under the weather. Today I found Treyton in his bed asleep all on his own accord. The poor kid still doesn't feel very good, and Carolina has just wanted to snuggle all day. I hope that they start feeling better soon too.

Happy New Year 2011!

We enjoyed our New Year's festivities very much this year. It was kind of low-key, which is just perfect for me.

We invited Lori and Aaron over to our house for New Year's Eve. We at pizza, watched a movie (Grown-ups for the adults and Shrek the Final Chapter for the kids), and played games. We tried to make it until mid-night but the babies were getting fussy so the Anglins left around 11:30 pm. It was really enjoyable to spend some quality time with some quality people. After the Anglins left we all stayed up until midnight to watch the ball drop- this is the first year we let the kids stay up and they thought it was pretty cool. Mitchel actually fell asleep a little before midnight on Reid's lap.

On New Years Day we slept in a little and then went over to my parents and had some lunch and played games. It was also very enjoyable. We spent the whole day visiting and playing games. The kids always have fun playing with their cousins and being very loud.

Kate and Naomi were very cute sitting under Naomi's blanket, Carolina saw this and had to get in on the action. They are the 3 muskateer girls.



Kate had enough and left, but I was never able to get a picture where they were all looking at the camera.

This doesn't have much to do with New Year's but has started building Mitch's room in the basement-so exciting!



This year I wanted to set a few goals or resolutions for 2011, I looked back to see if I kept my resolutions for last year and realized that I never set any. So I am going to try to do better this year.
1. Lose at least another 10 lbs, and hopefully 20.
2. Run another 1/2 marathon
3. Try to work on my food storage.
4- Read the Book of Mormon as a family- so far we have done it every night this week. Only 51 more weeks to go this year.
5- Build up our savings account so we have a couple months worth of savings.
We will see how I do.
